Live Crab Guide
Buying Live Crab at Hao Yi
Buying live crab can feel a little unfamiliar if you have not visited a live seafood shop before.
At Hao Yi Live Seafood, you are welcome to come in, look through the live tanks and ask our staff for help. You do not need to know exactly which crab, size or weight you want before visiting.
Our live crab range changes throughout the year depending on season and supply. We regularly stock Mud Crab, Spanner Crab, Crystal Crab, Blue Swimmer Crab and Giant King Crab.
Meet Our Live Crabs
Mud Crab - NT & QLD
Best for: Ginger and shallot, Singapore chilli, Black pepper, Salted egg yolk, Typhoon Shelter-style, Crab with noodles.
-
Mud crab is one of the most popular crabs we sell, and for good reason.
It has firm, sweet meat, substantial claws and holds up particularly well in strongly flavoured sauces. It is the crab many customers think of when making restaurant-style dishes at home.
-
Male mud crabs generally develop larger claws and are often chosen by customers wanting more claw meat. Female mud crabs are especially popular with customers who enjoy crab roe. When roe is present, it adds a rich, creamy flavour and is considered one of the most prized parts of the crab by many customers. This makes female mud crabs particularly popular for steaming or simpler cooking styles where the natural flavour of the crab and roe can be enjoyed.
The amount of roe can vary between individual crabs and throughout the year, so it is not something that can always be guaranteed.
-
If you are buying crab for a specific dish, tell us what you are cooking rather than simply asking for the “best” crab.
A crab suitable for a large family-style ginger and shallot dish may not be the same choice as one you want to steam and eat simply.
Spanner Crab - QLD
-
Spanner Crab sits nicely between Crystal Crab and Blue Swimmer Crab.
It has sweet, clean-tasting meat, but with a slightly more substantial, meaty texture than Blue Swimmer Crab. At the same time, it is still lighter and more delicate than Mud Crab.
That makes Spanner Crab one of the most versatile crabs to cook with.
It works well for customers who want plenty of crab flavour without needing a very rich or heavy dish.
-
Spanner Crab suits both simple and more flavourful preparations: Steamed, Ginger and shallot, Garlic sauce, Crab noodles, Congee, Hot pot, Stir-fried dishes
Its sweetness is still noticeable with simple cooking, but the meat also holds up well enough to work with sauces.
If you want something sweeter and more delicate than Mud Crab, but meatier and more versatile than Blue Swimmer Crab, Spanner Crab is a very good middle ground.
It is an especially good choice for family-style dishes because it works well with many different cooking methods.
Crystal Crab - WA
-
Crystal Crab is a premium deep-water crab from Western Australia, prized for its sweet, delicate white meat.
Living in the cool, deep waters off Western Australia contributes to the crab’s distinctive eating quality, with a clean flavour and delicate texture that sets it apart from many other crab species.
One of its most distinctive features is also its colour after cooking.
Most crustaceans develop a bright red or orange shell when cooked. Crystal Crab is different - its shell remains pale to white even after cooking, giving it its characteristic “crystal” appearance.
The combination of its sweet white meat, delicate texture and unusual appearance makes Crystal Crab quite different from the Mud Crabs and Blue Swimmer Crabs that many customers are more familiar with.
-
Because the meat is naturally sweet and delicate, we recommend keeping the cooking relatively simple so the flavour of the crab remains the focus: Steamed, Ginger and shallot, Light garlic sauce, With noodles, Served simply with a dipping sauce
Blue Swimmer Crab - SA
-
Blue Swimmer Crab has delicate, sweet meat and is much lighter than the dense, meaty texture of mud crab.
It is particularly popular when customers want the flavour of the crab itself to be the main focus rather than covering it in a heavy sauce.
-
Good choices include: Steaming, Ginger and shallot, Crab congee, Noodle dishes, Hot pot
Because they are smaller than mud crabs, customers will often buy several rather than one large crab.
Giant King Crab - SA / WA / TAS
-
Giant King Crab is very different from the other crabs in our tanks.
It is large, impressive and has thick legs containing substantial pieces of meat.
For this reason, customers often choose it for celebrations, large family meals or when they want something particularly memorable on the table.
-
King crab meat already has plenty of flavour.
Rather than using a very heavy sauce, simple cooking methods can work particularly well.
Steam it, gently warm the meat, or serve it with a light garlic, butter or Asian-style sauce.
First Time Buying Live Crabs?
Here is what normally happens when you visit us.
-
Come into the store and see what live crabs are available that day.
Our staff can show you the different species and sizes currently in stock.
-
You do not have to choose based purely on appearance.
Tell us:
“I’m cooking for four people.”
“I want to make ginger and shallot crab.”
“I have never cooked live crab before.”
“I want something sweeter and easier to eat.”
“I have a budget of around $___.”
That information can often help us recommend something much more suitable.
-
You can choose one yourself or ask our staff for assistance.
Different customers look for different things — species, size, claws, cooking style, number of people or budget.
There is not necessarily one “best” crab.
-
There is no fixed rule because it depends on how you are serving it.
If crab is the main dish, you will generally need more. If it is one dish among several at a shared dinner, you may need considerably less.
The species also makes a difference. One large mud crab is very different from several smaller Blue Swimmer Crabs.
Tell us how many people you're feeding, whether crab is the main dish and how you plan to cook it. We'll help you choose a suitable size and amount.
-
Live crab is generally sold by weight.
Prices vary according to species, size, season, supply and current market conditions.
We will weigh your selection so you know the price before purchasing.
Live crab availability and market pricing can change regularly, so customers looking for a particular species or size are encouraged to check with us before visiting.
-
If you would prefer not to prepare the crab yourself at home, just let our staff know.
Depending on the species and how you plan to cook it, we can cut or chop the crab for you so it is ready for cooking.
Taking Live Crab Home & Storing
-
Live crabs need to be handled a little differently from normal chilled seafood. The most important thing is to keep them comfortable, moist and at the right temperature for the species until you are ready to cook them.
-
Mud crabs are different.
Our mud crabs come from the warmer waters of Queensland and the Northern Territory, so they are better kept in a warm, humid and well-ventilated environment rather than being heavily chilled.
Avoid putting live mud crabs directly on ice or in the refrigerator.
A simple rule to remember:
Most crabs → keep cool
Mud crabs → keep warm and humid -
For most of our live crabs, including Blue Swimmer, Spanner and Crystal Crab, keep them cool and out of direct sunlight during transport.
Avoid leaving live crabs in a hot car or somewhere exposed to heat. If you have a longer drive home, let our staff know so we can pack them appropriately.
-
Live marine crabs should never be placed in tap water or fresh water.
Although it may seem like putting a crab in water would help keep it alive, these crabs are adapted to salt water. Fresh water can severely stress or kill them.
Unless you have an appropriately maintained saltwater system, it is generally better to keep the crab out of water and stored appropriately for its species.
-
How live crab should be stored depends on the species and how long you intend to keep it.
Rather than guessing, ask our staff when purchasing and let us know when you plan to cook it.
For the best quality, we generally recommend cooking live seafood as soon as practical after purchase.
